Maharashtrian brinjal curry
  • Oil
  • Cumin seeds
  • Mustard seeds
  • Onions
  • Ginger
  • Garlic
  • Tomatoes
  • Turmeric powder
  • Chilli powder
  • Brinjal
  • Peanuts
  • Coriander leaves

Steps

Step 1  

Take a tablespoon of oil in a pan and add cummin seeds + mustard seeds + 1 big onion and fry till golden brown.

Step 2  

Add grated ginger + grated garlic + 2 chopped tomatoes + tumeric powder + chilli powder + cummin powder + 4 brinjals chopped in big chunks. Fry for a few minutes then add a glass of water and cook till soft.

Step 3  

Add 2 tablespoons of coarsely ground peanuts and freshly chopped corriander, cook for a few minutes and serve with chapathis.
